Sushi Roku, a luxe sushi bar and hangout located at the posh W Scottsdale Hotel, (7277 E. Camelback Rd.), has rolled out a new menu that is both innovative and adventurous, bundling the world’s best flavors into every bite. Starting with the freshest fish and more from around the world, and incorporating with as much locally sourced food as possible, Sushi Roku’s bold new bill of fare takes on the essence of Korean, Italian and English-style cooking to showcase an array of hot and cold specialty appetizers and an extensive selection of exotic entrees, signature rolls, craft cocktails and more. Think Tuna Pizza, ‘crispy’ mushrooms and Bamboo Rice Risotto.
Executive Chef Joseph Castillo oversaw the fresh additions, which include dishes from the sea like the Octopus Crudo, with yuzu kosho olive oil and lemon ($18), Tuna Tartare ($19) and the decadent Toro Carpaccio with oscietra caviar ($42). The Avocado “Hanabi,” which translates to “fireworks” in Japanese, ($12) takes avocado toast to new heights with explosive textures and flavors. Additional standouts include the Chilled Roku Ramen with shrimp, sesame miso, cucumber and poached egg ($18), plus two new Signature Rolls, the Gensai ($17) with seared togarashi salmon, kizami wasabi and avocado, and the Senshi, a roll built around yellowtail featuring cucumber topped with avocado and spicy aioli ($16). The shareable, and soon to be crowd favorite Tuna Pizza, with crispy mushroom, balsamic, wasabi, aioli and serrano ($21) is expected to be a must order. Finally, the menu is rounded out with dishes straight from Sushi Roku’s dual-kitchen. The Nova Scotia Lobster Tail, paired with rich citrus butter ($42), and Bamboo Rice Risotto, with shrimp, scallop and truffles ($29).
The new items are complemented by returning standouts like the Bigeye Tuna Poke, with soy chili oil and sushi rice ($18), as well as hearty entrees like the Grilled Salmon, cooked over Japanese Bincho charcoal, with a refreshing wasabi yuzu creme fraiche, blood orange and fennel ($29).
Those with an adventurous appetite can savor Roku Signature Style Sushi, Sushi Roku’s master sushi chef’s custom creations, Ume, a six piece selection ($29) and the eight piece selection, Matsu ($43).
Plus, Sushi Roku now has an expanded menu featuring a variety of craft cocktails and fine spirits, with returning thirst-quenchers including the Mezcal-drenched Smokin Yuzu ($15) and The Bartender’s “Six” Cocktail, Sushi Roku’s Bartender’s Choice ($15). The bar is shaking things up with the addition of 10 brand new cocktails available for $15 each, including the green tea-infused Matcha Mule, Everything Zen with Nigori Sake, Darjeeling Express, The Ish, with shishito peppers, and the Ginger Lychee Mojito to name a few.
